Vinification, Maturation, Evolution and Refinement
After manual harvesting and destemming of the grapes, maceration takes place in concrete vats for a period of approximately 20 days in order to obtain the best extraction of color and tannins. The wine is then left to rest in French oak barriques for at least 12 months. A further 12 months of bottle aging then completes the cycle before it can be sold.
