Grapes
The Gajo vintage brut sparkling wine is mainly composed of a selection of Sangiovese grapes in addition to a small quantity of Pinot Noir.
Type of Land
Soil of sedimentary origin composed of marly calcareous clays. Among the prevalent types we find Chianti alberese, sandstone, clay, and other schists such as galestro.
Vinification, Maturation, Evolution and Refinement
The grapes harvested at the right ripeness are pressed whole and softly. The cold clarified must is fermented at low temperature. Then follows a "sparkling process" in an autoclave for a period of 6 months.
Organoleptic characteristics
Color: Straw yellow with amber reflections.
Perfume: Delicate and fine bouquet, with hints of fresh fruit.
Taste: Elegant, soft and balanced with clear fruity and delicate hints. The perlage is fine and persistent.

11.5% vol.
Gastronomic pairings
Perfect as an aperitif to accompany cold and raw land and sea appetizers. Perfect match for sushi.
Serve at a temperature of 6-8°C.
